Marinated Shrimp with Fresh Mint, Grapefruit & Ginger

SERVES 6 TO 8

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon grapefruit juice
  • 1 tablespoon grapefruit zest
  • 1/2 tablespoon grated ginger
  • ¼ cup fresh mint, chopped
  • ½ teaspoon kosher salt
  • 1 pound cooked medium shrimp

Directions

  1. In a bowl, combine olive oil, grapefruit juice, grapefruit zest, ginger, mint and salt. Stir in shrimp. Marinate and chill for 15 minutes before serving.
