Roasted Brussels Sprouts & Grapes

Ingredients

  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 1 pound seedless red Holiday grapes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, toss together the Brussels sprouts, grapes, olive oil, garlic, thyme, salt, and black pepper.
  3. Spread Brussels sprouts mixture onto a large-rimmed baking sheet; turn Brussels sprouts cut-side down.
  4. Roast Brussels sprouts for about 20-25 minutes or until tender and golden brown.
