Easy Watermelon Salad

Ingredients

  • 2 limes, juiced
  • 1/2 cup chopped red onion
  • 4 cups cubed watermelon, seeded
  • 1/4 cup pitted kalamata olives
  • 1/4 cup finely chopped fresh mint
  • 1/4 cup finely chopped fresh parsley
  • 1/2 cup crumbled feta cheese

Directions

  1. In a medium bowl, combine lime juice and onion; set aside for 10 minutes.
  2. Add watermelon, olives, mint and parsley to bowl with onion; gently stir. Cover with plastic wrap then place in refrigerator for 1 hour before serving.
  3. Sprinkle with cheese.
