Avocados with Bacon Vinaigrette

SERVES 4

Ingredients

  • 1/3 pound thin-sliced bacon
  • 2 tablespoons fresh lemon juice
  • 2 large garlic cloves, minced
  • 1 teaspoon sugar
  • ¼ cup water
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons chopped flat-leaf parsley
  • 2 firm-ripe avocados, each pitted, peeled and sliced into 6 wedges

Directions

  1. Place bacon in a large nonstick skillet set over medium heat; cook bacon until crisp. Drain bacon on paper towels.
  2. Discard all but 2 tablespoons bacon fat from skillet. Add lemon juice, garlic, sugar and water to skillet; simmer and stir for 1 minute then season with salt and pepper. Add parsley and crumble in cooked bacon.
  3. While ingredients heat in skillet, place 3 avocado wedges on each of four plates. Pour bacon vinaigrette over avocado wedges and serve immediately.
