Roasted Asparagus with Parmesan & Lemon

SERVES 6

Ingredients

  • 2 pounds of asparagus
  • 2 teaspoons olive oil
  • Salt
  • Freshly ground black pepper
  • 1/3 cup packed freshly shredded Parmesan cheese
  • Juice from 1 lemon

Directions

  1. Preheat oven to 475 degrees F.
  2. Snap off woody ends of asparagus; discard.
  3. Place asparagus in a large bowl then drizzle with olive oil; toss to coat.
  4. Place asparagus in a shallow baking dish then sprinkle with salt, pepper and Parmesan cheese.
  5. Bake for about 10 minutes or until crisp-tender and cheese is browned.
  6. Spritz with lemon juice then serve.
