Fresh Green Beans with Blue Cheese & Toasted Walnuts

SERVES 4

Ingredients

  • 1 pound fresh green beans, trimmed
  • ¼ cup water
  • 2 teaspoons extra-virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1/3 cup crumbled blue cheese
  • 1/3 cup toasted, chopped walnuts

Directions

  1. Place green beans and water in a large skillet; bring water to a boil. Cover skillet, reduce heat to a simmer and cook green beans for about 3 minutes, until just tender.
  2. Uncover skillet and continue cooking green beans for 3 to 4 more minutes, stirring occasionally, until water has evaporated.
  3. Add olive oil, salt and black pepper to skillet; stir green beans. Cook for 1 minute more.
  4. Transfer green beans to a large bowl and sprinkle with blue cheese; stir.
  5. Sprinkle green beans with walnuts then serve.
