Green Beans with Caramelized Shallots [Festival]

Ingredients

  • 4 tablespoons olive oil
  • 2 large shallots or small, sliced thin
  • 1 lb bag green beans
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon Salt, more to taste
  • Pepper, to taste

Directions

  1. Fill a saucepan halfway with water, bring to boil & add 1 teaspoon salt. Add beans and cook for 2 minutes. Drain and place in bowl of ice water to stop cooking, drain well & set aside.
  2. Add oil in large skillet on med-high heat. When hot, add shallots & caramelize, about 5 minutes. Then add beans, butter, salt & pepper, and parmesan. Toss well & turn off heat. Serve immediately.
