Pork Chops With Citrus Salsa

Ingredients

  • 6 pork chops
  • 1 orange
  • 1 grapefruit
  • 1 cup diced fresh pineapple
  • 1 fresh jalapeno pepper
  • 1/4 red onion
  • 1 tablespoon fresh coriander
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Directions

  1. Peel and dice the orange and the grapefruit, and then de-seed and finely chop the jalapeno pepper. Slice onion into thin strips and roughly cut the coriander. Mix everything in a large bowl and add a little salt, then cover and leave in the fridge for three to four hours for the flavors to develop.
  2. Preheat oven to 390 degrees F. Brown the pork chops in a dash of olive oil, and then season them with salt and pepper and transfer them to an oven proof dish. Cover the dish and cook for 30-40 minutes until the chops are cooked through and tender. Remove from oven and cool for 5-10 minutes, then top with fresh salsa and serve.
