Roasted Pork & Apples With Cider Glaze

Ingredients

  • 2 1/2 lb pork tenderloin
  • Sea salt, to taste
  • Fresh ground pepper, to taste
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoons butter
  • 1 cup apple cider
  • 2 tart green apples peeled, cored, and sliced 3/4 inch thick
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar

Directions

  1. Preheat oven to 400 degrees F. Rinse pork and pat dry. Season meat with salt and pepper and coat on all sides with herbs.
  2. Melt butter in a large ovenproof skillet. Add pork and cook over medium high until well browned on all sides.
  3. Add 3/4 cup cider to the skillet and cook until most of the liquid has evaporated. Add apples to the skillet. Stir together remaining 1/4 cup cider, honey and vinegar. Pour over pork.
  4. Place skillet in oven and cook for 20-25 minutes.
