Peaches 'a l'opera

Serves 6

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 3 large firm, ripe peaches (about 1 pound)
  • 1 pint ripe blackberries
  • 1/4 cup sugar
  • Whipped cream

Directions

  1. In a saucepan, mix 1 cup sugar and water. Place over medium heat and bring to boil, stirring constantly. Cover and boil 5 minutes. Remove from heat and stir in 1 teaspoon vanilla extract.
  2. Cut peaches in half, removing the pits. Set syrup over medium heat. Add peaches, 2 halves at a time, simmer for 3 minutes and remove. Repeat for the remaining peach halves. Chill peaches in the refrigerator. Meanwhile, rinse, drain and food process blackberries. Stir in 1/4 cup sugar. Chill in refrigerator. To serve, spoon some blackberry sauce into each of 6 individual serving dishes. Place 1 chilled peach half, cut side up, in each dish. Top with blackberry sauce and a dollop of whipped cream. Serve with remaining blackberry sauce.
