Poached Pears

Makes 6 Servings

Ingredients

  • 2 sticks cinnamon
  • 1/2 teaspoon whole cloves
  • 1/2 teasponn allspice berries
  • 1 quart wine (Red or white ,Aei whichever you prefer)
  • 1 1/2 cups of sugar
  • 6 Bosc pears

Directions

  1. Combine wine and sugar in a large pot. Add spices. (Tie them in a cheesecloth bag for easy removal, or add directly to the liquid). Bring the mixture to a boil, then turn heat to low and allow it to simmer for 5-10 minutes.
  2. While the liquid is simmering, peel and core pears using a small knife or melon baller.
  3. Place pears in simmering wine mixture and simmer for another 10 minutes. Remove from heat. Allow pears to steep in wine at least 20 minutes.

    May be prepared ahead of time and served warm or chilled. Serve pears with a small amount of poaching liquid.
