Baked Apples a la Halo Top! [Bristol]

Ingredients

  • Halo Top Ice Cream (Vanilla Bean)
  • 3 Apples
  • 1 Lemon Slice
  • 6 Dried Figs (chopped)
  • 6 Whole Walnuts (chopped)
  • 3 Tbsp Rolled Oats (gluten-free)
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Pumpkin Pie Spice
  • 1/2 Tbsp Vanilla Extract
  • 1/2 Tbsp Honey

Directions

  1. Slice off top and bottom of apple and scoop out the core to create a "bowl" for the filling. Be careful not to go all the way through the apple.
  2. Squeeze a slice of lemon over the apples so they don't turn brown.
  3. Mix together the filling - figs, walnuts, oats, honey, vanilla, cinnamon, and pumpkin pie spice - and insert the filling into the apple "bowls." Drizzle a little more honey on top.
  4. Place apples in Pyrex baking dish with enough water to cover the bottom of the dish and bottom of the apples, and bake at 350 degrees for 40 minutes.
  5. Top with Halo Top's healthy ice cream (vanilla bean)!
