Potato Cheese Soup

Makes 6 servings

Ingredients

  • 1 lb favorite link sausage, thinly sliced 1/16 to 1/8"
  • 4 lbs peeled and diced russet potatoes
  • 2 medium onions chopped
  • 4 cloves garlic chopped
  • 24 oz. deluxe American cheese
  • 1 stick butter
  • 1 T fresh rosemary, chopped
  • 16 to 32 oz. milk
  • Salt and pepper to taste

Directions

  1. In 6- or 8-quart pan, melt butter on medium-low heat with onions. After onions are translucent, add garlic and rosemary for 2 minutes. Add sausage and cook another 2 or 3 minutes. Add potatoes and cover potatoes with water.
  2. Change heat to high and bring potatoes to a boil.
  3. After potatoes become very tender, to the point of falling apart, reduce heat to low and add cheese a little at a time until all melted. Add milk, salt, and pepper and cover for 15 minutes.
  4. Great with saltine crackers.
