Shrimp Salad with Avocado & Mango

SERVES 6

Ingredients

  • 2 tablespoons vegetable oil
  • 3 tablespoons freshly squeezed lime juice
  • 1 tablespoon sugar
  • 2 medium size firm-ripe avocados
  • 2 large size firm-ripe mangoes
  • 2/3 cup chopped cilantro
  • ½ teaspoon dried red chile flakes
  • 2/3 cup thinly sliced green onions
  • 1 pound cooked shrimp, peeled

Directions

  1. Whisk oil, lime juice and sugar together in a big bowl, until sugar dissolves.
  2. Dice avocados and mangoes then add to bowl.
  3. Add cilantro, chile flakes, green onions and shrimp; gently mix ingredients together.
  4. Cover and chill for 1 hour before serving.
